Canterbury stretches across New Zealand’s central South Island, from the Pacific coast to the Southern Alps. It rewards a journey with several stops: the harbour landscapes of Banks Peninsula, the marine life around Kaikōura and the lakes and mountains farther inland each merit time of their own.
